Caseificio Borgonovo s.n.c is a small dairy farm which was born in 1991. However, the Palorni family has produced Grana Padano cheese since 1978. In addition, the property has more than 100 years and is therefore linked to history and to a little mechanized machining system. Nowadays this family company is run by the brothers Ennio and Gianfranco Palorni; they deal with milk collection and the production and aging of cheese.
Production
The company produces about 4,000 Grana Padano cheeses per year, 3,000 of which are cured for up to 12 months and then sold wholesale, the remaining are seasoned from 16 to 24 months.
It also produces butter, cottage cheese and a special type of cheese called “Cacio del Po”.
Grana Padano, matured for 16-24 months, is sold in hand-cut pieces both in the farm shop and in the shop located in Monticelli d’Ongina, run by their sister Carla.
