In Chero, a few kilometers from the medieval villages of Castell’Arquato and Velleja Romana, in the heart of the hilly territory of Piacenza, the family farmed vineyards in the Buffalora, La Costa and Case Ronchi areas.
Azienda Vitivinicola Montesissa Francesco covers an area of 30 acres of own property and 10 acres of rental property in Val Nure.
Production
The management of the cultivation of grapes is set according to the criterion of minimal chemical invasion in the vineyard: using natural fertilizers for plant nutrition and different ways of working will enhance the immune defenses of the screws.
The harvest is done strictly by hand, selecting each cluster before pressing. The preservation of the fruit-grapes during crushing operations is critical for the transformation into wine. By using a few machines and temperature control during all the fermentation process, they can monitor, step by step, the fermentation carried out by indigenous yeasts in the cellar.
At the end of the fermentation process, the wine stabilization occurs at low temperatures in vats located in the cellar; with further refinement, the new wines are prepared for the delicate operations of bottling.
